Una ricetta retrò ma sempre gustosa: Il cocktail di gamberi con salsa aurora

Son passati oltre vent’anni anzi forse trent’anni da quando ho mangiato il mio primo cocktail di gamberi, ricordo facevo ancora le scuole dell’obbligo ed ero al pranzo per la cresima di una amico in un bel ristorante a Boccadasse, erano i primissimi anni ‘80 e in quell’epoca era abbastanza di moda, un antipasto che è diventato un classico, un sapore ormai un po’ retrò che non tradisce mai. IN tutti quest’anni ho continuato a mangiarlo ma non l’ho mai preparato, forse per non voler proporre qualcosa che pensavo scontato, un sapore ormai noto, l’ho quindi sempre modificato, ad esempio con una guacamole al posto della salsa, ma alla fine ho deciso e mi son detto prepariamo una bel cocktail di gamberi e gamberetti con una deliziosa salsa aurora (una variante della salsa rosa e della salsa cocktail).
Ed eccolo qui nella sua presentazione più classica, in una coppetta di porcellana con la foglia di lattuga pronto per essere degustato e mangiato. Detto fatto ne ho preparate alcune porzioni ed inutile dirlo: non ne è avanzato neanche una minuscola parte, anche la piccola Ginevra ha particolarmente apprezzato.

La realizzazione di questo piatto è molto semplice e veloce, niente di complicato, cosa che fa ulteriormente apprezzare questo gustoso antipasto di pesce. E voi come lo realizzate?

Ingredienti per 4 persone
500 gr di code di gambero
1 cuore di lattuga
sale
Ingredienti per la salsa aurora
3 cucchiai di maionese
2 cucchiai di salsa di pomodoro
2 cucchiai di panna liquida
1 cucchiaio di un buon brandy
alcune gocce tabasco a piacere


Preparazione della salsa Aurora:

Amalgamare per bene insieme tutti gli ingredienti quindi coprire e lasciare raffreddare in frigorifero.
Sgusciare le code di gambero (mi raccomando crude se surgelate) e possibilmente eliminare il piccolo budello nero che altrimenti apporta un po’ di gusto amaro.
Lessarli in acqua salata per alcuni minuti, scolarli e farli raffreddare in frigorifero.
Al momento di servire mettere miscelare i gamberi con la salsa aurora,  quindi sistemare una foglia di lattuga per ogni coppetta e riempire con i gamberi insieme alla salsa aurora.

500 g shrimp tails

Ingredients for the sauce aurora
3 tablespoons mayonnaise
